大蒜素抗氧化活性及其生物效应的研究进展

摘要:

大蒜素是葱属植物大蒜内一类防御性分子,具有高度的生物活性.在自然情况下,大蒜素产生于大蒜组织损伤时,是由前体物质蒜氨酸转化而产生的.大蒜素是硫代亚磺酸类有机物,所含的巯基能与含硫蛋白质和谷胱甘肽发生氧化还原反应,并能通过多种途径抑制氧化应激,具有明显抗氧化的能力,在抑菌消炎、心脑血管疾病及抗肿瘤中有着重要作用.作者就大蒜素抗氧化活性及其生物效应的研究进展进行综述.
